I envisioned Poudre à Soupes as a spice blend to season soups for all ages and stages. A mixture of cumin, cinnamon, and coriander forms a base that enhances the tastes of a celeriac purée or a carrot-potato potage and heightens the flavors of all the vegetable medleys that warm up cold winter evenings.

Pepper is the only spice that is ever used on its own. Throughout the world, whenever spices are mentioned for a given cuisine, they are talked about in terms of spice blends. These are often based on combinations of coriander, cumin, and cinnamon because of their combined effects on the nose and palate.
