Stir 1 teaspoon of Poudre Defendue into 500 g. (1 pound) fresh, seasonal fruit along with the juice of half a lime. Sweeten with natural cane sugar to taste (optional). Chill 1 hour before serving.

Poudre Défendue ® enhances the flavors of fruit salads, sorbets, and cocktails. What first began as a way to magnify the flavor of fresh, seasonal strawberries became a blend that I now use with all fruit. The blend helps bring out the fruits’ natural features while balancing their acidity and unique flavors.
At my grandparents’ home, we used to rinse sun-warmed strawberries in well water drawn from a garden pump. The icy liquid coated the fruit with a strong taste of iron from the pump. Much later, I recreated that flavor experience with Poudre Défendue.
