Fatema Hall is an anthropologist and the chef-owner of Le Mansouria restaurant in Paris. We have the same values, and our friendship has grown out of our common passion for spiced-based cooking.
Fatema has shared her research on ‘dadas’ (accomplished women cooks who traditionally worked for rich Moroccan families) with me. These secrets included a secret recipe for ras el hanout spice blend, which has been passed down for generations.
Our exceptional ras el hanout is made with 28 different spices that we roast, steam, and grind ourselves in our Cancale kitchen laboratories.
