One day, the director of the Mont-Saint-Michel Abbey asked me to come up with an herbal tea infusion that could be served when visitors reached the summit of the Abbey during the ‘Imaginaires’ evenings held each summer. My mind hearkened back to the flavors of the medicinal herbs which the monks would offer pilgrims during the Middle Ages, and to the rich tastes of the spices brought back from the East by Crusaders. I imagined how the different worlds of Arabs, Crusaders, and Mont-Saint-Michel monks might have intermingled, musing that the herbal tea would need to pair the monastic herbs grown with care with the first spices the Crusaders introduced to Europe…and thus, ‘Songe de Nuit’ was born. To this day, a taste of the infusion whisks me away to a sweet, gentle dream world.
Sage is the primary component in this herbal infusion. Its renown is celebrated in this famous saying attributed to the first medical school in Salerno: “Why should a man die whilst sage grows in his garden? – If not because nothing can stand against death ?”
