Licorice (Glycyrrhiza glabra) is the root of a perennial plant native to Asia and southern Europe that grows up one meter tall. It is native to Asia and southern Licorice still grows wild in the South of France, though today, most of the spice that is traded is cultivated in in Spain as well as in Greece and Turkey. The Greek word for licorice, ‘glukurrhiza,’ means sweet root and Greek heroes chewed on sticks of licorice to help them forget their thirst in battle.  

We source this ground spice from a Spanish producer who grows and grinds cut sections of licorice root into a fine powder.
