‘Happy is he, who like Ulysses…’ travelled all over the Mediterranean, savored the taste of the wind on the sea, and returned home with dreamed-of fragrances and flavors. Yet Ulysses also had to battle with scurvy and find ways to preserve the scarce food reserves on his ships as he made course for the Phoenician coast.
The Mediterranean, birthplace of our civilization, has always had special meaning for Bretons. I was lucky to have studied Latin, and the translations of Homer left their indelible mark on me.
I have taken up the torch once more to imagine coastlines that are home to sun-dried plants and spices.I’ve remembered how Sicilian sailors combined flour and water and stored the mixture in their ships’ holds for what would ultimately become the Italian pasta everyone loves. When the sailors would travel up and down the coast for several days at a time, they would take the mixture made from Sicilian hard wheat, which kept especially well in the hot, humid climate.

I used spices, herbs, and aromatic plants to created Ulysses Powder as a kind of Mediterranean flavor bouquet. I recommend using it to season pasta (1/2 teaspoon for 2 servings). And don’t forget to drizzle the finished dish with olive oil to bring out the flavors, just as they did in ancient Greece.
